Ingredients

Scale
  • 1 package (9 oz) cheese tortellini
  • 1 lb sirloin steak, thinly sliced
  • 1 tablespoon olive oil
  • 1 medium onion, sliced
  • 1 green bell pepper, sliced
  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper, to taste
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1 cup provolone cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the cheese tortellini and cook according to package instructions (about 3-5 minutes) until they float to the top.
  3. Drain the tortellini and toss with a little olive oil to prevent sticking.
  4. In a large skillet, heat olive oil over medium-high heat.
  5. Add the thinly sliced sirloin steak, season with salt and pepper, and cook for 3-4 minutes until browned but not fully cooked. Remove and set aside.
  6. In the same skillet, add onion, green bell pepper, and mushrooms. Sauté for 5-7 minutes until tender and onions are translucent.
  7. Add minced garlic and Worcestershire sauce, stirring for 1 minute until fragrant.
  8. Pour in beef broth and bring to a simmer.
  9. Reduce heat to medium-low and stir in heavy cream, cooking for 2-3 minutes until slightly thickened.
  10. Gradually add provolone and Parmesan cheese, stirring until melted and smooth. Adjust seasoning with salt and pepper.
  11. Return cooked steak to the skillet with the sauce and vegetables, stirring for 2-3 minutes until steak is cooked through.
  12. Gently fold in the cooked tortellini, ensuring they are well coated with the sauce.
  13. Let everything simmer together for another minute or two.
  14. Spoon the cheesesteak tortellini into bowls or onto plates.
  15. Garnish with freshly chopped parsley before serving.

Notes

  • For added flavor, marinate the steak in olive oil, garlic, and herbs for a few hours before cooking.
  • For a spicy kick, add sliced jalapeños or hot sauce to the sauce.
  • Feel free to substitute provolone cheese with mozzarella or cheddar based on your preference.
  • Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently.
