- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 teaspoon balsamic vinegar
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 8 ounces fresh mozzarella cheese, sliced
- Fresh basil leaves, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Place the chicken breasts on a cutting board and pound them to an even thickness of about 1 inch.
- Season both sides of the chicken breasts generously with salt and pepper.
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Sear the chicken breasts for about 4-5 minutes on each side until golden brown.
- In a medium bowl, combine the halved cherry tomatoes, minced garlic, balsamic vinegar, dried oregano, and dried basil. Toss to coat the tomatoes.
- Remove the skillet from heat and spoon the tomato mixture over the chicken breasts.
- Place a slice of mozzarella cheese on top of each chicken breast.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F or 75°C) and the cheese is melted and bubbly.
- Remove the skillet from the oven and let the chicken rest for about 5 minutes.
- Garnish with fresh basil leaves before serving.
