  • 2 large chicken breasts, boneless and skinless
  • 1 cup fresh basil pesto
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella cheese, shredded
  • 4 large whole wheat or spinach tortillas
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 tablespoon balsamic glaze (optional)
  • Fresh basil leaves, for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pound the chicken breasts to an even thickness on a cutting board.
  3. Season both sides of the chicken with salt and pepper.
  4. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken for 4-5 minutes on each side until golden brown.
  5. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
  6. Remove the skillet from the oven and let the chicken rest for 5 minutes.
  7. In a medium bowl, combine halved cherry tomatoes and shredded mozzarella cheese. Season with salt and pepper.
  8. Slice the rested chicken into thin strips.
  9. Spread a generous layer of basil pesto on each tortilla.
  10. Place a few strips of sliced chicken in the center of each tortilla.
  11. Add a handful of the tomato and mozzarella mixture on top of the chicken. Drizzle with balsamic glaze if desired.
  12. Fold the sides of the tortilla inwards, then roll it up from the bottom to the top.
  13. Repeat for the remaining tortillas.
  14. Heat a grill pan or skillet over medium heat. Alternatively, use a panini press.
  15. Grill the wraps seam-side down for 2-3 minutes on each side until golden brown and crispy.
  16. Remove from the pan and let cool for a minute before slicing.
  17. Slice each wrap in half diagonally for easier eating and to showcase the layers.
  18. Garnish with fresh basil leaves and a drizzle of balsamic glaze if desired.
  19. Serve and enjoy these flavorful wraps for lunch, a picnic, or a light dinner!
