These Bruschetta Chicken Pesto Wraps are a flavorful and healthy meal featuring tender chicken, fresh basil pesto, juicy cherry tomatoes, and melted mozzarella, all wrapped in whole wheat or spinach tortillas. - 2 large chicken breasts, boneless and skinless
- 1 cup fresh basil pesto
- 1 cup cherry tomatoes, halved
- 1 cup mozzarella cheese, shredded
- 4 large whole wheat or spinach tortillas
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 tablespoon balsamic glaze (optional)
- Fresh basil leaves, for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Pound the chicken breasts to an even thickness on a cutting board.
- Season both sides of the chicken with salt and pepper.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken for 4-5 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
- Remove the skillet from the oven and let the chicken rest for 5 minutes.
- In a medium bowl, combine halved cherry tomatoes and shredded mozzarella cheese. Season with salt and pepper.
- Slice the rested chicken into thin strips.
- Spread a generous layer of basil pesto on each tortilla.
- Place a few strips of sliced chicken in the center of each tortilla.
- Add a handful of the tomato and mozzarella mixture on top of the chicken. Drizzle with balsamic glaze if desired.
- Fold the sides of the tortilla inwards, then roll it up from the bottom to the top.
- Repeat for the remaining tortillas.
- Heat a grill pan or skillet over medium heat. Alternatively, use a panini press.
- Grill the wraps seam-side down for 2-3 minutes on each side until golden brown and crispy.
- Remove from the pan and let cool for a minute before slicing.
- Slice each wrap in half diagonally for easier eating and to showcase the layers.
- Garnish with fresh basil leaves and a drizzle of balsamic glaze if desired.
- Serve and enjoy these flavorful wraps for lunch, a picnic, or a light dinner!
