Ingredients
Scale
- 8 oz. penne pasta
- 2 boneless, skinless chicken breasts
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- 1/4 cup balsamic vinegar
- 2 cloves garlic, minced
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup olive oil
- Salt and pepper, to taste
- 1/4 tsp red pepper flakes (optional)
Instructions
- Bring a large pot of salted water to a boil (about 1 tablespoon of salt).
- Add the penne pasta and cook according to package instructions (10-12 minutes) until al dente, stirring occasionally.
- Prepare a bowl of ice water. Once the pasta is cooked, drain it and transfer it to the ice water to cool. Drain again and set aside.
- Pound the chicken breasts to an even thickness (about 1 inch).
- Season both sides with salt, pepper, and red pepper flakes (if using).
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken and cook for 6-7 minutes on each side until the internal temperature reaches 165°F (75°C). Remove and let rest for 5 minutes.
- In the same skillet, reduce heat to medium and add the remaining 2 tablespoons of olive oil. Sauté the minced garlic for about 30 seconds.
- Add the halved cherry tomatoes and cook for 3-4 minutes until softened.
- Pour in the balsamic vinegar and simmer for 2-3 minutes until slightly thickened. Stir in the chopped basil.
- Slice the rested chicken into thin strips.
- In a large mixing bowl, combine the cooked penne, bruschetta topping, and sliced chicken. Toss gently.
- Add the shredded mozzarella cheese and toss again until well combined.
- Transfer to a serving platter or individual bowls. Garnish with extra basil leaves and drizzle with balsamic vinegar if desired.
- Serve immediately while warm.
Notes
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. The flavors will meld together, enhancing the taste.
