  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1 tablespoon lemon juice
  • Fresh thyme sprigs for garnish (optional)

Instructions

  1. In a medium bowl, combine the bourbon, brown sugar, soy sauce, Dijon mustard, olive oil, garlic powder, onion powder, black pepper, salt, and thyme. Whisk until the brown sugar is fully dissolved and the mixture is well combined.
  2. Add the sliced peaches to the marinade, gently tossing to coat. Let them soak for about 10-15 minutes while preparing the salmon.
  3. Preheat your oven to 400°F (200°C).
  4. Line a baking sheet with parchment paper or aluminum foil.
  5. Place the salmon fillets on the prepared baking sheet, skin-side down, spaced evenly.
  6. Drizzle lemon juice over the salmon fillets.
  7. Pour the marinade over the salmon fillets, ensuring each piece is well coated.
  8. Let the salmon marinate for about 15-20 minutes, or up to an hour in the refrigerator for more flavor.
  9. Arrange the peach slices around the salmon on the baking sheet.
  10. Transfer the baking sheet to the preheated oven and roast for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork (internal temperature should reach 145°F/63°C).
