A rich and creamy blue cheese spinach sauce that combines fresh spinach with a luscious blue cheese cream, perfect for drizzling over grilled meats, pasta, or baked potatoes.

- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 pound fresh spinach, washed and roughly chopped
- 1 cup heavy cream
- 4 ounces blue cheese, crumbled
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- 1/4 teaspoon nutmeg (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Wash the spinach thoroughly under cold running water. Drain in a colander and let sit to remove excess water. Roughly chop the spinach.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for 5-7 minutes until translucent. Add minced garlic and cook for an additional 1-2 minutes.
- Add the chopped spinach to the skillet and stir into the onion and garlic mixture. Cook for 3-5 minutes until wilted. Remove from heat.
- In a separate saucepan, warm the heavy cream over medium heat. Add crumbled blue cheese and stir until melted and smooth. Stir in Dijon mustard, season with salt and pepper, and add nutmeg if desired.
- Return the skillet with wilted spinach to the heat. Pour the creamy blue cheese sauce over the spinach and gently stir to combine. Simmer on low heat for 2-3 minutes. Remove from heat and garnish with parsley.
