- 1 cup fresh blackberries
- 1 tablespoon sugar (optional)
- 1 bottle of chilled sparkling wine (such as Prosecco or Champagne)
- 1 cup fresh orange juice

Instructions
- In a medium bowl, add the fresh blackberries. If you prefer a sweeter drink, sprinkle the tablespoon of sugar over the blackberries.
- Using a fork or a potato masher, gently mash the blackberries until they are broken down into a chunky puree. For a smoother texture, use a blender or food processor.
- Set the blackberry puree aside. It can be stored in an airtight container in the refrigerator for up to 2 days if made ahead of time.
- In a large pitcher, combine the fresh orange juice and the blackberry puree. Stir gently to mix.
- Pour the chilled sparkling wine into the pitcher with the juice and puree mixture. A good ratio is about 1 part puree and juice to 2 parts sparkling wine.
- Gently stir to combine, being careful not to lose too much carbonation.
- Fill champagne flutes or cocktail glasses about halfway with the blackberry mimosa mixture. Add ice cubes if desired.
- Garnish each glass with a few whole blackberries and a sprig of fresh mint.
- Serve immediately and enjoy!
