Ingredients
Scale
- 1 sheet of puff pastry, thawed
- 1 cup fresh blackberries
- 4 oz goat cheese, softened
- 2 tablespoons honey
- 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
- 1 egg, beaten (for egg wash)
- 1 tablespoon all-purpose flour (for dusting)
- Pinch of salt
- Freshly cracked black pepper (optional)
Instructions
- Wash the blackberries gently under cold water and pat them dry.
- In a medium bowl, mix the softened goat cheese, honey, fresh thyme, a pinch of salt, and black pepper (if using) until smooth.
- Gently fold in the blackberries and set aside.
- Preheat your oven to 400°F (200°C).
- On a floured surface, roll out the thawed puff pastry to about 1/8 inch thickness.
- Cut into rectangles, approximately 3 inches by 5 inches, yielding about 6-8 rectangles.
- Place a tablespoon of the blackberry and goat cheese filling in the center of each rectangle.
- Fold the pastry over to create a pocket, seal the edges, and crimp with a fork.
- Twist each sealed pocket gently to create a spiral effect.
- Place the twists on a parchment-lined baking sheet, leaving space between each.
- Brush the tops with the beaten egg and sprinkle with extra thyme if desired.
- Bake in the preheated oven for 15-20 minutes, or until golden brown and puffed.
- Allow the twists to cool for a few minutes before serving warm or at room temperature.
Notes
- Ensure the blackberries are dry before mixing to prevent a watery filling.
- Adjust the size of the pastry rectangles based on your preference for twist size.
- Leftovers can be stored in an airtight container in the fridge and reheated in the oven.
