  • Total Time: 35 minutes
  • Yield: 6-8 twists 1x

Description

Enjoy these delightful Blackberry Goat Cheese Twists, featuring flaky puff pastry filled with a creamy mixture of goat cheese, fresh blackberries, and honey. Perfect for appetizers or snacks, they offer a beautiful presentation and a deliciously sweet and tangy flavor.

Ingredients

Scale
  • 1 sheet of puff pastry, thawed
  • 1 cup fresh blackberries
  • 4 oz goat cheese, softened
  • 2 tablespoons honey
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon all-purpose flour (for dusting)
  • Pinch of salt
  • Freshly cracked black pepper (optional)

Instructions

  1. Wash the blackberries gently under cold water and pat them dry.
  2. In a medium bowl, mix the softened goat cheese, honey, fresh thyme, a pinch of salt, and black pepper (if using) until smooth.
  3. Gently fold in the blackberries and set aside.
  4. Preheat your oven to 400°F (200°C).
  5. On a floured surface, roll out the thawed puff pastry to about 1/8 inch thickness.
  6. Cut into rectangles, approximately 3 inches by 5 inches, yielding about 6-8 rectangles.
  7. Place a tablespoon of the blackberry and goat cheese filling in the center of each rectangle.
  8. Fold the pastry over to create a pocket, seal the edges, and crimp with a fork.
  9. Twist each sealed pocket gently to create a spiral effect.
  10. Place the twists on a parchment-lined baking sheet, leaving space between each.
  11. Brush the tops with the beaten egg and sprinkle with extra thyme if desired.
  12. Bake in the preheated oven for 15-20 minutes, or until golden brown and puffed.
  13. Allow the twists to cool for a few minutes before serving warm or at room temperature.

Notes

  • Ensure the blackberries are dry before mixing to prevent a watery filling.
  • Adjust the size of the pastry rectangles based on your preference for twist size.
  • Leftovers can be stored in an airtight container in the fridge and reheated in the oven.
