- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the Yukon Gold potatoes thoroughly under running water to remove any dirt. Scrub them gently with a vegetable brush.
- Pat the potatoes dry with a kitchen towel.
- Cut each potato into quarters, ensuring they are roughly the same size for even cooking.
- Place the quartered potatoes in a large mixing bowl.
- Drizzle the olive oil over the potatoes.
- Add the minced garlic, dried oregano, dried thyme, salt, and pepper to the bowl.
- Toss the potatoes until they are well coated with the oil and seasonings.
- Crumble the feta cheese into a bowl or leave it in larger chunks if preferred.
- Halve the cherry tomatoes.
- In a large baking dish, spread the seasoned potatoes in an even layer.
- Sprinkle the crumbled feta cheese evenly over the potatoes.
- Scatter the halved cherry tomatoes over the top.
- Drizzle a little more olive oil over everything.
- Place the baking dish in the preheated oven and roast for about 30-35 minutes, stirring halfway through.
- Check the potatoes for doneness; they should be fork-tender and golden brown. If needed, roast for an additional 5-10 minutes.
- Remove the dish from the oven and let it cool for a few minutes.
- Sprinkle freshly chopped parsley over the top before serving.
- Serve warm as a side dish or main course.
