  • 1/2 cup cherry tomatoes, halved
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the Yukon Gold potatoes thoroughly under running water to remove any dirt. Scrub them gently with a vegetable brush.
  3. Pat the potatoes dry with a kitchen towel.
  4. Cut each potato into quarters, ensuring they are roughly the same size for even cooking.
  5. Place the quartered potatoes in a large mixing bowl.
  6. Drizzle the olive oil over the potatoes.
  7. Add the minced garlic, dried oregano, dried thyme, salt, and pepper to the bowl.
  8. Toss the potatoes until they are well coated with the oil and seasonings.
  9. Crumble the feta cheese into a bowl or leave it in larger chunks if preferred.
  10. Halve the cherry tomatoes.
  11. In a large baking dish, spread the seasoned potatoes in an even layer.
  12. Sprinkle the crumbled feta cheese evenly over the potatoes.
  13. Scatter the halved cherry tomatoes over the top.
  14. Drizzle a little more olive oil over everything.
  15. Place the baking dish in the preheated oven and roast for about 30-35 minutes, stirring halfway through.
  16. Check the potatoes for doneness; they should be fork-tender and golden brown. If needed, roast for an additional 5-10 minutes.
  17. Remove the dish from the oven and let it cool for a few minutes.
  18. Sprinkle freshly chopped parsley over the top before serving.
